May to September was the time we traditionally fished for sturgeon, which we call skwó:wech. The way we could tell it was time to fish for them was by noting when the cotton began to fall from the trees, which co-incided with the right time to begin. Sturgeon are eaten fresh, and also salted and dried. We also eat the eggs of the sturgeon (which look like blueberries), and can it. Canned sturgeon tastes like canned tuna.
After September we never fished for sturgeon, because this would have destroyed the sturgeon's eggs, and damaged the resource. In any case, later in the winter the sturgeon bury themselves in the sand.
